makes 1 loaf panIngredients:1 1/2 cup all purpose flour
1 1/4 cup white sugar
1/4 cup butter
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
3 ripe bananas
1/2 cup light brown sugar
1/2 cup raw sugar
2 tablespoons cinnamonDirections:Preheat oven 350 degrees. Grease and flour loaf pan. Mash bananas. Add flour, 3/4 cup of white sugar, butter, vanilla, baking powder, baking soda and egg in a large mixing bowl. Mix well. Pour in loaf pan.
Combine brown sugar, raw sugar, rest of the white sugar and cinnamon. Sprinkle on top of loaf.
Bake 50-60 minutes.

Cook time: 20 minutes This recipe is always the hit at the party...even my kids (totally picky eaters) love this salad! Sweet summer tastes blends well with the Italian flavored chicken with a hint of heat from the peppers. This is what I call a mouth full of flavor!
Dressing:
- 1/3 cup white sugar
- 1 heaping tablespoon brown sugar
- 1/2 cup light cooking oil
- 1/4 cup white vinegar
- dash of paprika
- 1/2 teaspoon Worcestershire sauce
Dressing Directions: Combine all dressing ingredients in a small -medium sized bowl using a wire whisk. Let stand in fridge until ready to use. Dressing will thicken and combine flavors in about 20 minutes. *Hint* Don't use until the sugars have dissolved in the oil.
Italian Grilled Chicken:
- 1 pound boneless, skinless chicken breast strips
- salt and pepper to taste
- Dried Italian seasoning
- Crushed Red Pepper
- Olive Oil
Italian Grilled Chicken Directions: Remove chicken from packaging and wash well with cool water. Lay out in a flat layer. Pat dry with a paper towel. Drizzle lightly with olive oil. Sprinkle (to taste) with dried seasonings. Place chicken straight on the grill.
Salad Ingredients:
- 1 bag of ready-to-eat spinach leaves
- 2 cups of sliced fresh strawberries
- 1 large can mandarin oranges, drained
- 1 ounce almond slices
- thinly sliced purple onion
Putting it all together: Layer spinach leaves, strawberries, mandarins and onion in a large salad bowl. Drizzle on dressing and toss well to coat. Add layer of chicken strips (may cut up in bite-size pieces if desired). Add almond slices. Dig in!
