Sensational Spinach and Strawberry Salad w/ Italian Grilled Chicken

Cook time: 20 minutes

This recipe is always the hit at the party...even my kids (totally picky eaters) love this salad! Sweet summer tastes blends well with the Italian flavored chicken with a hint of heat from the peppers. This is what I call a mouth full of flavor!


Dressing:
  • 1/3 cup white sugar
  • 1 heaping tablespoon brown sugar
  • 1/2 cup light cooking oil
  • 1/4 cup white vinegar
  • dash of paprika
  • 1/2 teaspoon Worcestershire sauce
Dressing Directions: Combine all dressing ingredients in a small -medium sized bowl using a wire whisk. Let stand in fridge until ready to use. Dressing will thicken and combine flavors in about 20 minutes. *Hint* Don't use until the sugars have dissolved in the oil.

Italian Grilled Chicken:

  • 1 pound boneless, skinless chicken breast strips
  • salt and pepper to taste
  • Dried Italian seasoning
  • Crushed Red Pepper
  • Olive Oil

Italian Grilled Chicken Directions:
Remove chicken from packaging and wash well with cool water. Lay out in a flat layer. Pat dry with a paper towel. Drizzle lightly with olive oil. Sprinkle (to taste) with dried seasonings. Place chicken straight on the grill.


Salad Ingredients:
  • 1 bag of ready-to-eat spinach leaves
  • 2 cups of sliced fresh strawberries
  • 1 large can mandarin oranges, drained
  • 1 ounce almond slices
  • thinly sliced purple onion

Putting it all together:
Layer spinach leaves, strawberries, mandarins and onion in a large salad bowl. Drizzle on dressing and toss well to coat. Add layer of chicken strips (may cut up in bite-size pieces if desired). Add almond slices. Dig in!
